This high-protein, low-carb bread is made without traditional flour or added sugar. With whey protein and psyllium husk, it has a soft texture and is perfect for toast, sandwiches, or a quick snack.
Ingredients
- 1 cup unflavored whey protein isolate
- ½ cup psyllium husk powder
- 2 tsp baking powder
- ½ tsp salt
- 1 cup warm water
- 2 large eggs
- 2 tbsp olive oil or melted coconut oil
- Optional: 1–2 tbsp erythritol
Instructions
- Preheat oven to 350°F (175°C). Line a small 6-inch oven-safe bowl or baking dish with parchment paper.
- Mix whey protein, psyllium husk, baking powder, salt, and erythritol if using.
- In another bowl, whisk together warm water, eggs, and oil.
- Combine the wet and dry ingredients until a thick dough forms. Let rest for 5–10 minutes.
- Transfer to the prepared dish and smooth the top.
- Bake for 35–45 minutes, until golden and cooked through.
- Remove from the dish and cool completely on a wire rack before slicing.
Tips
- Let the dough rest so the psyllium can absorb the liquid.
- Avoid overmixing for a softer texture.
- Cool completely before slicing to prevent a gummy center.
- Store in an airtight container for up to 3 days or refrigerate for up to 5 days.
- Slice and freeze for up to 2 months.
Serving Ideas
Enjoy toasted with avocado, eggs, sugar-free jam, nut butter, cheese, or lean meats. You can also add garlic, herbs, seeds, or cinnamon for different flavors.
