These Cheesy Garlic Pull-Apart Pizza Bread Bites are soft, buttery, garlicky, and loaded with melted mozzarella and Parmesan. They’re perfect as an appetizer, snack, or easy side dish served with warm marinara sauce.
Ingredients
Dough
- 3¼ cups all-purpose flour
- 2¼ tsp yeast
- 1 tbsp sugar
- 1 tsp salt
- 1 cup warm water
- 2 tbsp olive oil
Garlic Butter
- 5 tbsp melted butter
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp oregano
- ½ tsp dried parsley
- ¼ tsp red pepper flakes, optional
- ¼ tsp salt
Topping
- 2½ cups shredded mozzarella
- ½ cup grated Parmesan
- ½ tsp oregano
- ½ tsp Italian seasoning
- Fresh parsley, optional
- Warm marinara or pizza sauce for dipping
Instructions
- Make the dough: Mix warm water, sugar, and yeast. Add olive oil, flour, and salt. Knead for 7–8 minutes until smooth. Cover and let rise for 45–60 minutes.
- Make garlic butter: Combine melted butter with garlic and seasonings.
- Shape: Roll the dough into a 12×16-inch rectangle and place on a lined baking sheet. Score into 1½–2-inch squares without cutting completely through.
- Add butter: Brush generously with garlic butter, getting it into the cuts. Rest for 15–20 minutes.
- Add cheese: Sprinkle mozzarella, Parmesan, oregano, and Italian seasoning over the dough.
- Bake: Bake at 400°F (200°C) for 20–25 minutes, until golden and bubbly. Broil briefly for extra browning if desired.
- Finish: Brush with remaining garlic butter and sprinkle with parsley or Parmesan. Rest for 5 minutes before pulling apart.
Tips
Use low-moisture mozzarella for the best texture and freshly grated Parmesan for better browning. For crispier edges, use a metal baking sheet.
For a pizza-style version, add a thin layer of pizza sauce, pepperoni, mushrooms, olives, or cooked sausage before adding the cheese.
Serve warm with marinara, ranch, garlic butter, or cheese sauce for dipping.
