Easy High-Protein, Low-Carb Bread

This high-protein, low-carb bread is made without traditional flour or added sugar. With whey protein and psyllium husk, it has a soft texture and is perfect for toast, sandwiches, or a quick snack.

Ingredients

  • 1 cup unflavored whey protein isolate
  • ½ cup psyllium husk powder
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup warm water
  • 2 large eggs
  • 2 tbsp olive oil or melted coconut oil
  • Optional: 1–2 tbsp erythritol

Instructions

  1. Preheat oven to 350°F (175°C). Line a small 6-inch oven-safe bowl or baking dish with parchment paper.
  2. Mix whey protein, psyllium husk, baking powder, salt, and erythritol if using.
  3. In another bowl, whisk together warm water, eggs, and oil.
  4. Combine the wet and dry ingredients until a thick dough forms. Let rest for 5–10 minutes.
  5. Transfer to the prepared dish and smooth the top.
  6. Bake for 35–45 minutes, until golden and cooked through.
  7. Remove from the dish and cool completely on a wire rack before slicing.

Tips

  • Let the dough rest so the psyllium can absorb the liquid.
  • Avoid overmixing for a softer texture.
  • Cool completely before slicing to prevent a gummy center.
  • Store in an airtight container for up to 3 days or refrigerate for up to 5 days.
  • Slice and freeze for up to 2 months.

Serving Ideas

Enjoy toasted with avocado, eggs, sugar-free jam, nut butter, cheese, or lean meats. You can also add garlic, herbs, seeds, or cinnamon for different flavors.
