This Ham and Cheese Crustless Quiche is an easy, cheesy breakfast or brunch made without a crust. It’s packed with savory ham, cheddar, and mozzarella, then baked until golden and perfectly set.
Ingredients
- 8 large eggs
- 1 cup milk
- ½ cup heavy cream
- 1½ cups cooked ham, diced
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 2 tbsp fresh parsley or green onions, optional
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
- Dice the cooked ham into small pieces.
- Whisk eggs, milk, and heavy cream until smooth.
- Add salt, pepper, and garlic powder.
- Stir in the ham, cheddar, mozzarella, and optional herbs.
- Pour into the prepared dish and spread evenly.
- Bake for 35–45 minutes, until the center is set and lightly golden.
- Let rest for 5–10 minutes, then slice and serve.

- Add cooked spinach, mushrooms, broccoli, peppers, or green onions.
