1. Cook the onions
Melt butter in a skillet over medium heat.
Add onions and cook gently for about 10 minutes until soft and translucent, not browned. Transfer to a bowl.
2. Make the beef mixture
Add ground beef, softened butter, salt, pepper, thyme, and egg to the onions.
Mix thoroughly with a spoon until fully combined and slightly sticky.
3. Shape and chill
Form into thick patties (about 3/4 inch).
Cover and chill until firm.
4. Flour and cook
Lightly coat patties in flour, shaking off excess.
Heat butter and oil in a skillet over medium-high heat.
Cook patties 2–3 minutes per side, or until done to your liking.
Remove and keep warm.
5. Build the sauce
Drain excess fat from the pan.
Add liquid and scrape the pan to release browned bits.
Boil until reduced to a light syrup consistency.
