This incredibly juicy Mayonnaise and Parmesan Chicken is a simple yet delicious dish that is perfect for a weeknight dinner or as a party appetizer. The creamy coating locks in moisture while creating a savory, golden crust!
Ingredients
- 4 boneless skinless chicken breasts
- 1 cup mayonnaise for a healthier option, use plain Greek yogurt instead
- ½ cup grated Parmesan cheese
- 1 teaspoon seasoning salt
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
Instructions
- Preheat: Preheat the oven to 375°F (190°C), OR preheat your grill to medium-high heat.
- Mix the Coating: In a small mixing bowl, combine the mayonnaise, grated Parmesan cheese, seasoning salt, black pepper, and garlic powder. Mix well.
- Coat the Chicken: Place the chicken breasts in a large resealable bag or in a shallow dish. Pour the mayonnaise mixture over the chicken, making sure that each piece is fully coated.
- Marinate: Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 24 hours, to allow the chicken to marinate.
- If Baking: Place the marinated chicken breasts on a baking sheet lined with foil. Bake for 25-30 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
- If Grilling: Place the chicken on the grill and cook for about 6-8 minutes on each side or until the internal temperature of the chicken reaches 165°F (74°C).
- Rest and Serve: Once the chicken is cooked, remove it from the oven or grill and let it rest for a few minutes before slicing and serving. Serve hot and enjoy!
Notes
Pro-Tip: For a beautiful presentation and a nice touch of color, add a sprinkle of extra grated Parmesan cheese and some fresh chopped parsley to the top of the chicken right before serving!
