Ingredients

  • 1 pound ground beef, or ground turkey for a leaner option
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced (a combination of red and green works well)
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) tomato sauce, preferably with no added sugar
  • 4 cups beef or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

1. Sauté the Aromatics

Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the diced onion and minced garlic. Sauté for about 2–3 minutes, stirring occasionally, until the onion becomes soft and translucent.

2. Brown the Beef
