Mini cheesecake bites with a graham cracker crust, creamy no-bake filling, and juicy cherry pie topping. Perfect for warm days or quick desserts, these bites are cool, sweet-tart, and require just 15 minutes of prep. A no-oven treat that balances tangy and fruity flavors.
Ingredients
- 1 pack graham crackers (~9-10 full crackers)
- 1 box no-bake cheesecake filling mix or pre-prepared filling
- 1 can (21 oz) cherry pie filling
Instructions
- Prepare the cheesecake filling by mixing the powder with cold milk or cream until smooth and thick.
- Crush graham crackers in a Ziploc bag until fine crumbs form.
- Press 1 teaspoon of crumbs into the bottom of each serving cup or mold.
- Spoon or pipe 1-2 tablespoons of no-bake cheesecake filling over the crust in each cup.
- Top each bite with 1-2 tablespoons of cherry pie filling using the back of the spoon.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
For consistent size, use 1/4 cup measuring scoops. Optional: Add a whole cherry on top of each bite for garnish. Store covered in the refrigerator for up to 3 days.
