PINEAPPLE BREAD PUDDING

INGREDIENTS

  • ½ cup butter (1 stick), melted
  • 1 cup white sugar
  • 6 eggs
  • ½ tablespoon vanilla extract
  • 6 thick slices of white bread, cubed
  • 1 20oz can crushed pineapple, drained
  • ½ cup packed brown sugar

PREPARATION

  1. Grease an 8×8 baking dish and preheat the oven to 350°F.
  2. In a large bowl, mix together the butter and white sugar until fully combined and airy.
  3. Beat eggs into the sugar mixture one at a time.
  4. Add the cubed bread to the bowl and stir until saturated.
  5. Gently fold in the drained crushed pineapple until evenly distributed throughout the mixture.
  6. Transfer the mixture to the prepared baking dish and sprinkle brown sugar over the top.
  7. Bake until the top begins to brown, about 50-55 minutes.

By adding step 5, you ensure the crushed pineapple is properly incorporated into the bread pudding before baking. Enjoy your Pineapple Bread Pudding!

      Thank you for bringing this to my attention! The pineapple should be incorporated into the recipe along with the bread mixture before baking. I apologize for the oversight in not including it in the directions. You can add diced pineapple to the bread mixture in step 5 before pouring the custard mixture over it. I’ll make sure to update the recipe to clarify this. Thanks again for pointing it out!
