Stove Top Stuffing Meatloaf

Ingredients

  • 1½ pounds ground beef (80/20 is ideal)
  • 1 box Stove Top Stuffing (any flavor)
  • 2 large eggs

Optional Additions

  • ½ cup milk or beef broth for extra moisture
  • ½ cup diced onion or bell pepper
  • ¼ cup ketchup or barbecue sauce mixed into the meat
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ cup shredded cheese

Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or a 9×13-inch baking dish.
  2. Mix the Ingredients
    In a large bowl, combine the ground beef, stuffing mix, and eggs. Add any optional ingredients if desired.
  3. Combine Gently
    Mix just until everything is incorporated. Avoid overmixing to keep the meatloaf tender.
  4. Shape the Loaf
    Form the mixture into a loaf shape and place it in the prepared baking dish.
  5. Bake
    Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest Before Slicing
    Let the meatloaf rest for 5–10 minutes before slicing.

Variations & Tips

  • Moister Meatloaf: Add ½ cup milk or broth.
  • Sweet Glaze: Spread ketchup or barbecue sauce over the top before baking.
  • Turkey Version: Substitute ground turkey; add milk to keep it moist.
  • Cheesy Twist: Mix shredded cheddar into the meat.
  • Mini Meatloaves: Divide into muffin tins and bake 20–25 minutes.
