These blueberry streusel muffins are soft, fluffy, and packed with protein, making them perfect for breakfast or a snack. You get that classic bakery-style crumb topping with a healthier twist.

Ingredients

Muffins

  • 1 cup oat flour (or blended oats)
  • 1/2 cup protein powder (vanilla works best)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup Greek yogurt (high protein boost)
  • 1/3 cup milk
  • 1/4 cup honey or sugar-free sweetener
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Streusel Topping

  • 1/3 cup oat flour
  • 2 tbsp butter (or coconut oil)
  • 2 tbsp sweetener
  • 1/2 tsp cinnamon

 Instructions

1. Preheat

Set oven to 180°C (350°F) and line a muffin tray.

2. Mix dry ingredients

In a bowl, combine oat flour, protein powder, baking powder, baking soda, and salt.

3. Mix wet ingredients

In another bowl, whisk eggs, Greek yogurt, milk, sweetener, and vanilla.

4. Combine

Mix wet and dry ingredients until just combined (don’t overmix).

5. Add blueberries

Gently fold in blueberries.

6. Make streusel

Mix all topping ingredients until crumbly.

7. Assemble

Fill muffin cups, then sprinkle streusel on top.

8. Bake

Bake for 18–22 minutes until golden and set
