These slow cooker glazed pork chops are the kind of dinner that looks impressive but practically makes itself. Bone-in chops simmer low and slow in a sweet, tangy glaze until they are fall-apart tender — then the sauce gets thickened into a rich, glossy finish that coats every bite. Perfect for busy weeknights or feeding a crowd.
Ingredients
- 4 bone-in pork chops, about 1 inch thick
- 1 tbsp olive oil
- ½ cup low-sodium soy sauce
- ¼ cup apple cider vinegar
- ¼ cup packed brown sugar
- 2 tbsp honey
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp black pepper
- ¼ tsp ground ginger
- 1 tbsp cornstarch + 2 tbsp cold water
Instructions
- Optional but recommended: Sear the pork chops in olive oil for 2–3 minutes per side until golden. Transfer to the slow cooker.
- Whisk together soy sauce, vinegar, brown sugar, honey, Worcestershire, garlic powder, pepper, and ginger. Pour over the chops.
- Cook on LOW for 4–6 hours or HIGH for 2–3 hours, until tender.
- Remove the chops. Pour the cooking liquid into a saucepan, whisk in the cornstarch slurry, and simmer 2–3 minutes until thickened.
- Pour the glaze over the chops and serve.
Tips
- Bone-in chops stay juicier — worth the extra cook time.
- Use low-sodium soy sauce to control the saltiness.
- Do not skip the cornstarch step — it turns the liquid into a proper glossy glaze.
