  • 1 teaspoon cornstarch
  • ⅓ cup granulated sugar
  • 1¼ cups desiccated coconut

Preparation

Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, allowing some overhang, and lightly grease the paper.

In a large bowl, cream the butter and sugar together until pale and airy. Add the egg yolks and vanilla extract, mixing until fully combined.

In a separate bowl, sift together the flour, baking powder, and salt. Add the dry ingredients to the butter mixture and mix just until a soft dough forms.

Press the dough evenly into the prepared baking dish, making sure it reaches all the edges. Spoon the raspberry jam over the base and spread it into an even layer.

To make the meringue topping, place the egg whites and cornstarch in a clean bowl. Using a hand mixer, beat until soft peaks form. Gradually add the sugar while continuing to beat until the mixture becomes thick, glossy, and holds firm peaks. Gently fold in the desiccated coconut.

Carefully spoon the meringue mixture over the jam layer and spread evenly, taking care not to mix the layers.
