Ingredients
1 1/2 lbs boneless skinless chicken breasts
1 (14 oz) can green beans, drained
1 (6 oz) box dry stuffing mix
1 (10 oz) can cream of chicken soup
1/2 cup sour cream
4 tablespoons unsalted butter, melted
Optional: 2 teaspoons Italian seasoning, 1 teaspoon dried minced onion, salt and black pepper
Instructions
Season chicken with salt, pepper, and optional spices if using, then place the chicken in the bottom of the slow cooker.
Add the drained green beans on top of the chicken. Pour the dry stuffing mix over the beans.
In a bowl, whisk together sour cream, cream of chicken soup, melted butter, and 1/3 cup water until smooth.
Pour the mixture over the stuffing inside the slow cooker. Roughly stir the top layer to moisten the stuffing.
Cover and cook on high for 4–5 hours (or low for 6–7 hours) until chicken is fully cooked.
Stir to combine the chicken and stuffing, lightly shredding the chicken.
For a browned top, you can place the ceramic insert under the broiler for a few minutes.
Serve warm — a full comforting meal with almost no effort.
