3-Ingredient Buttermilk Baked Potatoes are a simple yet incredibly comforting dish made with just potatoes, buttermilk, and butter (or cheese). The potatoes are baked until tender, then infused with creamy, tangy buttermilk that soaks into every bite. As they finish baking, the tops turn golden and slightly crispy while the inside stays soft and fluffy.
Ingredients
- 4 medium russet potatoes about 900 g total
- 1 cup buttermilk
- 2 tbsp butter melted
- Optional not counted in the 3 ingredients
- pinch of salt
- pinch of black pepper
Method
- Preheat the oven
- Heat oven to 400°F (200°C).
- Lightly grease a baking dish or line with parchment paper.
- Prepare the potatoes
- Wash and dry the potatoes thoroughly.
- Pierce each potato several times with a fork to allow steam to escape during baking.
- First bake
- Place potatoes directly in the baking dish.
- Bake for 35–40 minutes, until they begin to soften but are not fully cooked.
- Add the buttermilk mixture
- Carefully remove potatoes from the oven.
- Cut a slit across the top of each potato and gently press the ends to open slightly.
- Pour buttermilk evenly over the potatoes, allowing some liquid to soak inside.
- Drizzle melted butter over the top.
- Finish baking
- Return potatoes to the oven and bake 10–15 minutes more, until tender inside and slightly golden on top.
- Serve
- Let cool for a few minutes before serving.
- Add salt and pepper if desired.
