Honey Bun Cookies

A classic breakfast favorite, baked into soft, buttery cookies.

Ingredients

For the Honey Butter Cookies
3 cups all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
1 cup unsalted butter, room temperature
⅔ cup granulated sugar
¼ cup light brown sugar, packed
2 large eggs, room temperature
2 teaspoons vanilla extract

For the Honey Butter Glaze
4 tablespoons unsalted butter, softened
⅔ cup powdered sugar
2 tablespoons honey
2 tablespoons milk

Preparation

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

In a medium bowl, whisk together the flour, cornstarch, baking soda, salt, and cinnamon until evenly combined. Set aside.

In a separate large bowl, beat the butter with the granulated sugar and brown sugar until light, fluffy, and smooth. Add the eggs one at a time, mixing well after each addition, then blend in the vanilla extract. Scrape down the sides and bottom of the bowl to ensure everything is well incorporated.

Gradually add the dry ingredients to the wet mixture, mixing just until combined and no streaks of flour remain. Divide the dough into 12 to 14 equal portions. Roll each portion into a ball, then gently flatten into rounds about 1 inch thick. Place the cookies on the prepared baking sheets, leaving 3 to 4 inches of space between each one.

Using the tip of a chopstick, lightly swirl a spiral pattern on the top of each cookie to mimic the classic honey bun look. Bake for 11 to 13 minutes, rotating the pans halfway through, until the cookies are set but still soft. Remove from the oven and let the cookies rest on the baking sheets for 15 to 20 minutes.

Honey Butter Glaze

While the cookies bake, prepare the glaze. In a small saucepan over medium-low heat, combine the butter, powdered sugar, honey, and milk. Whisk continuously until the sugar is fully dissolved and the glaze is smooth, making sure it does not come to a boil. Remove from heat.

While the cookies are still warm, gently brush the honey butter glaze over the tops, allowing it to soak in slightly. Let the cookies cool completely before serving.
