Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups rolled oats
Wet Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
Mix-Ins
- 1 cup chocolate chips
- 1 cup chopped pecans
- ¾ cup sweetened shredded coconut
Instructions
1. Preheat
Heat your oven to 350°F (175°C). Line two baking sheets with parchment.
2. Cream the Butter & Sugars
Beat together the butter, brown sugar, and white sugar until creamy and fluffy.
3. Add Eggs & Vanilla
Beat in the eggs one at a time, then add the vanilla.
4. Add Dry Ingredients
In another bowl, whisk flour, baking soda, baking powder, and salt.
Add this to the wet mixture. Stir in the oats.
5. Add the Good Stuff
Fold in the chocolate chips, pecans, and coconut. This makes them chunky and cowboy-style!
6. Scoop & Bake
Drop 2–3 tablespoon-sized scoops onto baking sheets.
Bake 10–12 minutes, until edges are golden but centers are still soft.
7. Cool
Let them cool 10 minutes — they firm up as they rest.
