These cookies are soft, moist, fluffy, and packed with real banana flavor. They taste like warm banana bread straight out of the oven — but with the convenience of a cookie. Perfect for breakfast treats, dessert trays, and cozy Southern-style baking.
Ingredients
Wet Ingredients
- ½ cup (1 stick) unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mashed ripe banana (about 2 medium bananas)
Dry Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
Add-Ins (Optional but amazing!)
- ½ cup chopped walnuts or pecans
- ½ cup chocolate chips
- ½ cup old-fashioned oats
Instructions
1. Preheat
Heat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream Butter & Sugars
Beat butter + brown sugar + granulated sugar until light and creamy.
3. Add Egg, Vanilla & Banana
Mix in the egg, vanilla, and mashed bananas until smooth.
(Don’t worry if it looks a little curdled — that’s normal!)
4. Add Dry Ingredients
Whisk together flour, baking powder, baking soda, cinnamon, and salt.
Add to the wet mixture and mix gently.
5. Fold in Add-Ins
Stir in nuts, chocolate chips, or oats if using.
6. Scoop & Bake
Drop spoonfuls (or scoop 1 ½ tbsp balls) onto the baking sheet.
Bake 10–12 minutes, until tops are set and lightly golden.
7. Cool
Let them cool 10 minutes — they’re very soft right out of the oven.
