Ingredients

  • 1 premade graham cracker pie crust

Preparation

  1. In a small bowl, add water and gelatin powder. Let bloom for 5–10 minutes.
  2. Prepare an ice bath large enough to fit the saucepan. Set aside for step 4.
  3. In a large saucepan, whisk together 1/3 cup granulated sugar, flour, salt, and milk. Bring mixture to a boil over medium heat and cook for 1 minute while stirring constantly.
  4. Whisk the bloomed gelatin into the saucepan. Remove from heat, stir in vanilla and almond extracts, then place the saucepan in the ice bath to cool quickly.
  5. In a small bowl, beat 1/2 cup heavy cream until stiff peaks form. Set aside.
  6. In another bowl, beat egg whites, cream of tartar, and the remaining 1/3 cup sugar until stiff peaks form.

  9. Pour filling into the graham cracker crust and spread into an even layer.
  10. Whip the remaining 2 cups heavy cream until stiff peaks form, then spread or pipe over the pie.
