Mound Bars

Ingredients

  • 3 cups unsweetened shredded coconut14 oz sweetened condensed milk15 oz dark chocolate

Instructions

  1. Prepare the Coconut Mixture:
  2. In a bowl, combine the shredded coconut and sweetened condensed milk.
  3. Shape the Bars:
  4. With clean, damp hands, shape the coconut mixture into 12 logs. Place each log on a parchment-lined baking sheet.
  5. Freeze the coconut logs for about 20 minutes.
  6. Melt the Chocolate:
  7. In a microwave-safe bowl, melt 10 ounces of the dark chocolate. Microwave on high power for 30 seconds, then in 15-second intervals, stirring well between each interval, until the chocolate is completely melted.
  8. Add the remaining 5 ounces of chocolate to the melted chocolate and stir until fully melted.
  9. Coat the Bars:
  10. Using forks, dip each coconut log into the melted chocolate, ensuring it’s fully coated.
  11. Transfer the chocolate-covered bars back onto the parchment-lined baking sheet.
  12. Let the chocolate set. Since the bars were chilled in the freezer, the chocolate should harden quickly.
  13. Serve and Enjoy:
  14. Once the chocolate has set, the Mound Bars are ready to enjoy!
