These fritters are truly the epitome of perfection. Packed with tender chunks of fresh apple and enveloped in a sweet and tangy glaze, they offer a delightful crunch with every bite.

And the best part? You can indulge in a couple (or a whole batch, if you’re like me) without any guilt, thanks to their baked preparation.

Ingredients

  • Cooking spray
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp kosher salt
  • ¼ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup unsweetened applesauce
  • 2 medium Honeycrisp or Gala apples, finely chopped
  • 2 cups powdered sugar
  • ⅓ cup plus 2 tbsp apple juice or cider

Instructions

  1. Preheat the oven to 400°F and grease a baking sheet with cooking spray.
  2. In a medium bowl, combine the flour, baking powder, cinnamon, and salt.
  3. In a large bowl, cream together the melted butter and sugar. Add the egg, vanilla extract, and applesauce, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the chopped apples.
  5. Drop tablespoon-sized portions of batter onto the prepared baking sheet, leaving space between each one.
  6. Bake for 10 minutes, then switch the oven to broil on high.
  7. Meanwhile, prepare the glaze by whisking together the powdered sugar and apple juice or cider until smooth and pourable.
  8. Drizzle the glaze over the warm fritter bites, allowing it to run down the edges. Broil for 2-4 minutes, or until the glaze begins to bubble and caramelize.
  9. Remove from the oven and generously coat the tops of the fritters with the remaining glaze.
  10. Allow the glaze to set for 15 minutes before serving.
