A delightful shortcut to crafting stuffed peppers, this soup recipe is a cherished favorite of mine. I guarantee you’ll savor every spoonful!

Ingredients:

  • 1/2 pound of Italian sausage
  • 1/2 pound of lean ground beef
  • 1 finely diced small onion
  • 1 green bell pepper, finely diced
  • 1 red bell pepper, finely diced
  • 3 cloves of garlic, minced
  • 4 cups of low-sodium beef broth
  • 2 cups of low-sodium chicken or vegetable broth
  • 1 can (14.5 ounces) of salsa-style tomatoes
  • 3/4 cup of uncooked rice (preferably jasmine)
  • Kosher salt and freshly ground black pepper, to taste

Instructions:

  1. In a pot or casserole set over medium heat, brown the Italian sausage and ground beef, ensuring to crumble as you cook.
  2. Midway through browning, incorporate the diced onions and peppers, stirring intermittently. During the final minute of browning, reduce the heat to medium-low and add the minced garlic, stirring constantly. Discard any excess fat.
  3. Pour in the beef broth, chicken broth, and salsa-style tomatoes. Allow the mixture to simmer for approximately 15 minutes or until the peppers begin to tenderize.
  4. Add the uncooked rice to the simmering mixture, ensuring it is evenly coated. Cover and cook for 5-7 minutes or until the rice reaches desired tenderness. For optimal results, serve promptly. Season with kosher salt and freshly ground black pepper according to your taste preferences.
